Easy Homemade Lemon Drizzle Cake Recipe
What a perfect Sunday! Yesterday me and my friend Susie baked homemade lemon drizzle cakes after our attempt to go swimming failed due to a water polo club taking over our local pool. Although don't see baking as a contradiction to fitness.. we plan on giving these to our friends/boyfriends because we like to think a homemade gift is pretty sweet, however I am dying to tuck into his already because he hasn't come to see me yet!
For the cake you will need:
4oz soft butter
4oz caster sugar
2 eggs
4oz sf flour
1tsp baking soda
Lemon
For the topping you will need:
2 Lemons
Damera Sugar (Brown)
Icing Sugar
Yellow food colouring
Vanilla essence
Method:
Heat the oven to 150 degrees
1.Weigh the butter and sugar and place into a large mixing bowl.
2.With a wooden spoon, cream the butter and the sugar against the bowl until smooth
3.Crack two eggs into another bowl and whisk.
4.Slowly add the egg into the butter and sugar mix and beat together.
5.At this stage, you will want to add 1 lemons juice and grate the rind of this lemon and add to the mix for an extra zesty cake flavour.
6. Weigh the self-raising flour and add 1tsp of baking soda into the flour mix.
7. Slowly sieve the flour into the beaten egg, sugar and butter mix, whilst folding the flour into the mix with a metal spoon. It is essential you FOLD rather than stir, as this will trap in air into the mix, giving you a better rise of cake.
8. Once all the flour is folded in, test the mix for dropping consistency by lifting the spoon. It should be a good consistency, but don't worry if it is a little wetter than previous cakes because of the extra lemon juice. Lemon cakes are always a little moist and I think they are much better this way.
9. Grease your cake tin with butter/vegetable lard or coconut oil and put into the oven to bake for 20 minutes. After 15 minutes, check how the cakes have risen and stick a long metal stick (such as a BBQ skewer or thin knife) into the middle of the cake and check if it comes out with moisture on the end. If it does, bake the cake for another 5/7 minutes.
10. Once baked and golden on top, take the cakes out of the oven and leave to cool, preferably on a cake wire.
Whilst your cakes are cooling, you can make your icing toppings.

Mix brown demera sugar and fresh squeezed lemon juice together in a bowl, and grate the rind of this lemon. Mix together.

In a separate bowl, mix together icing sugar, fresh lemon juice, a dash of vanilla essence and a tiny bit of yellow food colouring together until you get a good consistency of icing. You want this fairly thick but again with a good dropping consistency.
Once the cakes have cooled for over 15 minutes, apply icing #1 all over the cake.
Once this has dried, take a metal spoon and drizzle icing #2 over your cakes, we did a V pattern (and very messily for a more home-made look!). I also think a criss-cross pattern would look lovely!
The combination and texture of these two icings make this cake extra special and completely lemony-heaven.

I like to mix Mid Century Modern prints with newer contemporary separates sometimes, such as my 'Splendid' wrap shirt in Abstract I got for Christmas from my mum, made by Lady K Loves (Kessie is a Bristol based retro repro designer and has a great little shop!), mixed with my Skort from Topshop and paired with vintage Bally shoes I found in a charity shop and a vintage beaded handbag I got in a junk shop at home. My bamboo hoop earrings are by Bow & Crossbones.

Say hello to feeling chic in Bristol and my new basket bike, Betty
I am totally happy and pleased I made the decision to move to Bristol!
After leaving London 'temporarily' after University, the plan was to intern, get hired and move back. I did intern, I didn't get hired at that particular agency because they didn't have a junior position available at the time. I did however have the opportunity to stay on or do some work for them again in the future, but I was at the end of my tether with sofa surfing and I was running out of money fast.
So I packed up and moved back to Somerset to focus on applying for full time jobs.
The whole time I lived in London ( a whole 3 years..) all I thought about was how little money I had, spending OVER DOUBLE the amount I pay now on rent. I also had a strange feeling of being anonymous in my own city, which I put down to such an influx of people and a crowded tourism industry that sometimes makes you forget who you are and you get lost in the midst of the bustle - and no job is worth having an identity crisis over!
So the identity crisis ended as I moved to Somerset for a few months and then, when I could afford to, I took the plunge to live somewhere new! Bristol is only an hour away from my parents and friends in Somerset and a large chunk of my extended family live here!
So now I'm feeling settled, making friends, working freelance in marketing and building on existing family relationships, I really want to make the effort to blog again, and work on my hobbies - I'm so excited to finally start to learn Lindy Hop on Thursday, something I have aimed to get done for about 2 years! Gosh, time does fly.
I have even bought my dream basket bike and called it Betty, a Pinnacle Californium, which I am now almost crying over seeing as it's gone in the sale.. sods law. I absolutely love it though and she was worth every penny.

I found a new blog called CycleChic which helped me to find an awesome 'fashionable' ladies helmet. I am loving these Bern helmets, mixing practicality with a great adjusting wheel at the back and air vents with an attractive shell with front rim, so that pesky low winter sun doesn't get in my eyes so much!

You may have noticed my withdrawal from blogging - once again I am sofa surfing although this time I technically have a bed.
I have made the decision to permanently leave London. It just wasn't for me at all and it was making me completely unhappy.
I moved back to Somerset after finishing another internship, focussing on my career in PR/Marketing and passion for the creative industries. I have to admit, the aftermath from the recession means there are little jobs for the amount of people applying and I have struggled in finding something.
I do have a job at the moment so all is not bad, and I am trying to find a house share in Bristol too.
The hunt for a home is a funny one, filled with uncertainty, but I am fully confident I should land something at least by next week (touch wood), and then I can really begin to start work on my blogging and get my life in order too.
